We would like to thank Dana of the 2Stir with Love food blog for sharing her recipe for a delicious Indian lentil stew, which is made with yellow lentils, spices, and jalapeños which gives it a bit of a kick!
3 cups yellow lentils
½ cup onion, small diced
2 tbsp celery, small diced
½ cup red & green long peppers hot, sliced
¼ cup jalapeño, minced
1 ½ tbsp crushed garlic
3 tbsp oil
1 tsp turmeric
1 tsp cumin seeds
2 ½ tsp curry powder
1 tsp salt
1 cup of roasted tomatoes with their juices
2.5 cups of water
1. Chop all the fresh ingredients into a fine mince, then sauté them in a pan with oil.
2. Once the fresh ingredients are softened, add the dried spices and let them all infuse together until they turn into a delicious sauce base. You can dry fry the spices beforehand to unleash their aromas.
3. Add the roasted tomatoes and lentils, along with some water to cover them, then cover the pan and let simmer until done. You can also use a tin of tomatoes if you don’t have the roasted variety to hand.
This dish can be served with other fantastic side dishes such as Indian Spiced Rice, Spiced Cauliflower, Potato Pancakes, and raita.
